What is the office 2003 application that lets you put "post it" style sticky notes on the desktop? Also, what is Visio and Project and OneNote in Office 2003? Thanks

Well surprisingly Microsoft have a web site that explains it all, here:

Visio is a diagram tool for drawing office layouts or other diagrams.

Project is a tool for helping to manage projects, like building a school or planning a product launch (in fact it can be used for any project).

OneNote is for note taking and research gathering. I do not think they have a product for putting sticky notes on the desktop, but Onenote is the nearest to that.
