Can anyone tell me if it is best to have ECC or Non ECC RAM as I am not even totally sure of the difference?

ECC is error correcting code and is normally used in servers. The ECC RAM has an extra chip which checks for errors thus making it more reliable (though it can decrease performance). Your mainboard may not take ECC RAM and I would be surprised if you could see a discernable difference between the two (except for cost).
for an average home computer, non-EEC memory is what you're after.

as j2buttonsw says, EEc is used in servers and more high-end machines.
