I know how to use Excel to create an xy chart from two columns of data, but if the columns are very long is there a way to split them into two or three shorter pairs of columns side-by-side, without affecting the final chart?

I do not believe this is possible, having just tried it!
One way to do it would to create a temporary data table somewhere else in your worksheet, and to just copy the columns in parts to make up however many chart columns you need. Then create the chart based on the temporary data.
