Does anyone have recipe for a bacon and egg pie? my mum used to make them which was a bit like a quiche because it doesn't have a pastry top on it, but not as soft and fluffy in the middle -if that makes sense! TIA k8

In England, it used to be called bacon and egg 'flan', until people decided to go posh and call it 'quiche'. Try this one...

Thanks heathfield - do you think it'd be the same if I missed out the cup of cream? just can't imagine my mum having used that...will have to give it a go and see how it turns out!
My Mum used to make it like a "quiche " but
put a lid on it so it was a pie , it was lovely , not
tasted one in years , but she still makes a lovely
bacon and onion roly poly suet pudding !!!
What we called bacon and egg pie was made with bacon and hard boiled eggs in a pie, quite different from a quiche where the egg was added in liquid form. Another version (grannies) put the eggs in whole, not mixed, i.e crack open the shell and put the contents in without stirring.
This brings back happy memories. I used to love bacon and egg flan. Especially the crispy bits on top! Mmmmmm.
Sure, you can leave out the cream, K8. Though this will make the cooked filling more dense. Why not try both ways, then adjust the ingredients to your liking?
