Freezing water

Whilst out in Iraq recently I took a 2 litre bottle of cold water out of the fridge. I walked outside into the hot Iraqi heat and opened the bottle. As the bottle opened the water could be seen to freeze solid immediately. Why does this happen?

Are you sure you pulled it out the fridge, and not the freezer?

I will avoid the bite. It was definately the fridge, the big give away was the lack of freezer compartment
