Went a little Med tonight with a Salad Nicoise. I can tell you, many black olives were devoured in the making of the meal ;)

Roast chicken night # 2, one leg and some breast meat now warming up in a spicy gravy with mash on the side and then a salad of green leaves, chives, chicory leaves, cucumber, romanesque pepper strips, grapes and onions - with a homemade dressing....

I just had spuds and beans for dinner this evening, had loads of plans for grand dinner, but, was too warm for cooking, threw few spuds in pot and half tin of NAS beans on plate over them and steamed - I liked it :)

Whoops, posted too soon.
We had scrambled eggs on toast all done in the utility room with minimum space as we’re having the kitchen refurbed. Only started yesterday and I’m fed up with it already. The joiner is a lovely chap but the entire house is upside down and covered in wood dust, I’m sure it’ll be worth it…….

I made up a meal from an online delivery service recipe box - Courgette, White Bean & Pesto Orzo. The ingredients included black olives but some of them seemed to disappear during preparation ;-)

More eating up the fridge ahead of a shop tomorrow - chicken risotto tomorrow - probably with mushrooms in the mix along with some herbs....the stock for the risotto sitting in the deep freeze...

Thanks for the welcome back, decided to take a wee break, work is very intense and I am studying for a diploma for work so everything’s full on.
We went and spent some time in Donegal for a change but I prefer Galway.
Still have another week off so doing domestic chores this week.
