They could pay £30,000 each for 7 academic posts and still earn a huge amount of money.

Returning to the original question, university chancellors' are by and large, ceremonial figureheads that are usually paid nominal fees for expenses etc but cannot be regarded as salaried.

Some of the more famous UK universities have chancellors' that are famous from the public domain and are typically well known industrialists, diplomats, bankers or have served in government etc. Members of the House of Lords are quite prevalent amongst them.

Younger universities tend to have chancellors who are amongst the "great and the good" in the locality. I attended and spoke at a graduation ceremony in the Midlands area a few months ago where the Chancellor was a famous landowner in the area: in fact, a village down the road from the university was virtually entirely owned by his family and was part of the estate. I was not surprised when I was invited to the vice-chancellor's home later that day that he/she lived in the village concerned. Ah, twas ever thus.
Unless my googling skills have failed me, our local university doesn't seem to have a Chancellor! (However, since it only came into existence earlier this year, there's not yet been a need for a Chancellor to present its degrees). If so, it will be interesting to see who gets the job when one is needed.
The Chancellor of Sheffield University who presented me with my degree in 1975 was a politician (Rab Butler). Since then they've had a chemist, a banker and (currently) a High Court judge (who is also the first woman to hold the post).
There is no absolute necessity to have a chancellor Chris. Vice-chancellors are well up to doing the job in my experience and that combined with a personable celebrity from TV etc, is usually all it takes for everyone to have a day to remember. I've been delighted with some I've shared the platform with over the years.

I think you also have to remember that the logistics of getting the Chancellor on the platform in each and every ceremony at Oxford, Cambridge and Durham given the individual college structure, is well nigh impossible!
