I don't have itunes on this pc but from my recollection you click on the track in the listing and get an option to put 'info' in including the song name, artist name and album name.  Sorry I can't describe it better!
you have to change the tagging of the song
Go to Library, then change the song name, and it SHOULD be changed in your iPod... but I don't know if that works without Autofill. My suggestion is that you name your tracks beforehand!
When uploading a cd you can go to "advanced" and then "get cd track names"
Press Ctrl+I (or go to File and open 'Get Info'). In the window that opens you should have four subtitles at the top. The first is Summary, the next one is Info -click on that, and type in all the info you want, and click OK. That will change it. Alternatively, try uploading music from CDs when youre connected to the internet - that way, all the track names should be entered automatically.
