It is possible in a roundabout way...

Rename the files with a new extension e.g. accounts as .DOCA  &  personnel as .DOCP (you will notice these files will lose their original icons)

Select one of the new filetypes, right click and select Open With... , choose Select the program from a list and from the dialog box choose the application you use e.g. Microsoft Word. The document should then open in the app.  Repeat for all new extensions.

To apply icons to the new filetypes in Explorer use Tools  >  Folder Options...  >  File Types  to select the new extension (DOCA), click  Advanced  >  Change Icon...  and pick a new icon from the default shell32.dll library or any other source of icons.  Repeat for all new extensions.

Note: the new documents will be readable by any other machine but will not be automatically recognized unless you revert to the original extension or use this process to register the filetype on that machine.

Mac OS X does this no problem. You can use custome lables which let you highlight the name in any colour you like. No need to change anything to do with file.
