Anyone like it?
I've been having baby leaves on a salad sandwich instead of lettuce because I apparently need more iron. Can't really think of any other ways to encorporate it into my diet. Popeye was very funny, always enjoyed those cartoons 💪

It can be wilted and eaten with a roast.  Add the little bit of liquid from it your gravy and waste none of its benefits.  

Creamed...in omelettes and quiche...combine with rocket in salads...spinach and potato curry...spinach and chickpea curry. Add garlic to it in whatever you use it for.

Trouble is I don't like it wilted, can tolerate it as a salad leaf but that's about it. Maybe now it's cooler and I start doing soups and stews I'll chuck some in those.

If you can't eat the amount you think you need you could always take the easy way out and take an iron supplement.

I love creamed spinach with my sunday dinner - just a hint of nutmeg

It's the slimy texture it goes when cooked, I just can't tolerate it. Having said that, pasta, I've just been looking at chickpea recipes and the curry one looks tasty so maybe I'll give that a go.

Had to stop the iron supplement which is why I'm trying to add iron rich food to my diet. Drinking prune juice every day, and fresh orange juice, and taking a vit c pill.

Actually it's nice in a curry with paneer too.

its lovely in curry - look for recipes that say saag in the title

my favourite is saag aloo or chicken tikka saag but any curry can have spinach added to it- so if you like korma bung in the spinach

The connection between iron and spinach is based on an error in the 1950s if I remember rightly.   It is high in iron compared with most other veggies but far from the best source.

 

The best sources of iron are red meat, offal, shellfish especially oysters, oily fish  soya,  quinoa, tofu, many beans and pulses, fortified cereals ( manufacturers add iron to most common brands)

Iron is absorbed more effectively in the presence of vitamin C so some tomatoes, or similar  added to meals will help

The Vegan mob here on AB need to lay off attacking others for their eating habits....the last thing we need is another Spinach Inquisition.

Love a curry with spinach in. 

I buy frozen baby leaf spinach.  I add it to boiling water before adding gravy granules.  It virtually disappears in the gravy, just another way of eating a different vegetable.
