what happens if you put too much coolant in your coolant bottle and can it have long term damage?

No, it will expand and overflow out of the pressure relief valve.

depends how much uv put in!! 2 much anti freeze is as bad as havin none!!

Actually you can run it on neat antifreeze, in some very cold parts of the world it is essential.
