Our friends are coming to stay for the weekend shortly and I don't want to spend most of my time in the kitchen, has anyone got any ideas of easy food to cook for an evening meal.  Thanks.

Chicken or Beef Fajitas are always good.  I cook the meat and the peppers etc during the day, fridge them and then zap them in the microwave when needed.  Also find that a slow cooker is great for these situations, u can make chilli con carnes, curries, beef braised in guinness, chicken in wine etc, doing all the prep and hard work early in the day, slam it all in the slow cooker and it will be ready in the evening when you are. 

anything that is marinated and then grilled or barbecued is good and easy. Add a salad and some tesco finest fresh oven chips (expensive but worth it) crusty bread and dipping oil if you are feeling fancy or jacket spud if you are feeling healthy. Sweetcorn is excellent at the moment. either boil in water and serve or roll up in buttered foil and grill or barby for about 10 minutes, turning often. Pasta with a bought sauce, waitroses are good, or that bloke with the funny accent whose mname escapes me from america or seeds of change if you like organic, again just add bread and a salad oooooh hungry!!
Go to M+S and buy a load of stuff from there. It's fab and completely stress free, plus most of it looks home made. If not M+S then Tesco Finest is also good - I passed a load of that off as my own a few months back.

give em a BBQ one night .....the blokes WILL take over and you will have a night off !
make a few different things and freeze, then just unfreeze and add ready made salad, and bread

lots of variations, but you basically whack it all together and leave it in the oven for a few hours.
