Olive Oil

I have made some chilli oil by simply adding small chillis to a jar of Olive Oil, I have chopped some in half and left some whole. Will the Chillis go off or keep indefinetly?

The oil should preserve the chillies though the container must be kept sealed as natural chilli oils are volatile and will be released into the air losing the flavour . If you have used fresh chilli I have a feeling the oils will be more volatile as there has not been a preservation process to the chilli that would stabilize them. It is best that dried whole chillies are used in olive oil, sun dried if possible as they have the other rich flavours as well.
