Bread Pudding

1Ib bread
1 pint milk
4 oz melted butter
4 oz soft dark brown sugar
4 level tsp mixed spice
2 beaten eggs
12oz dried fruit

Line and grease a 10inch by 8 inch 1 1/2 inch depth tin,
Remove crusts from bread and tear into pieces, pour over milk and leave to soak up for at least 1/2 hr.
Add melted butter, sugar, spices and eggs, then mash with a fork.Stir in fruit and spread into a buttered baking dish. Cook for 1 /1-1/4 hrs on gas mark 4.
Google it and you'll find loads of recipes.
For an extra special pudding try using pannatone instead of bread & using evaporated milk in place of cows milk. This is also delicious with tinned apricots added to the ingredients. Hope you like it !
