Non Sugar Cake Recipe

I am making a sugar free fruit cake for a surprise party this week. If I substituted soaking fruit overnight in tea, with soaking fruit overnight in apple juice would this work as an alternative sweetener so I could leave out the sugar?
Any other suggestions for a cake? Honey is the only other ok sweetener I could use.

natural sugars are ok aparrently, so the sugar in fruits is allowed and natural sweeteners like honey. it is just refined sugars that are the issue.
There is no issue about refined sugars. In fact, table sugar is one of the purest substances you can eat. It is pure sucrose and perfectly natural. What is important is to remember that sugar adds just empty calories to your diet, ie there are no other nutrients. However, as long as you realise this and eat a balanced diet then there is no problem. Personally, I wouldn't worry about the sugar in cakes etc but about the high fat content.
Soaking fruit in fruit juice should be fine. Here is an apple cake recipe:
