6oz dates chopped and stoned 6flozs boiling water 2oz butter 4oz brown sugar 1 egg 2 tbsp brandy 5 1/2 oz plain flour 2 tsp baking powder pinch salt 3/4 tsp freshly grated nutmeg 3oz chopped walnuts or you can use pecans soak your dates in the boiling water, let them cool, heat your oven to gas mark 4 -180c. Line a loaf tin with grease proof paper ( grease that too ) . whisk together your butter and sugar, when its fluffy add the egg and brandy , then sift in your flour baking powder and nutmeg, flold together and slowly add and fold in your dates ( and the cooled boiling water they are in ). Fold in your chopped nuts. Poru this little lot into your greased and lined tin and baked in the oven for 45-50 mins until a skewer comes out clean. leave it in the tin for about another 10 mins then turn it out and let it cool completely, Now boil the kettle and make a nice cup of coffee, sit back and enjoy a slice.
