What are the best kind of spuds to make chips with?

we use Maris Piper or Edwards - different, but both good.
To get the best chips, fry with the lid on for a bit - this cooks them through - .then lift them out and get the fat really hot before putting them in again - careful, they're soft at this stage. If you shake them before putting back the second time, you get them crispier.

King Edward or Maris Piper are good chip-taters.
I usually use Maris Piper.

When I was much younger I used to make chips often. In my opinion, any kind of potatoes make good chips even sweet potatoes make delicious chips.
