instead of just cooking it, what do you do to enhance the flavour, what do you cook it with or what do you cover it with any ideas please

mixed herbs, salt, pepper, butter & squeeze of lemon juice.

just butter, salt, pepper. Half an hour before end of cooking time - spread with honey and finish roasting.

sprinkled dry chicken oxo cubes over the skin & roast covered in foil.

you can get all purpose seasoning that can be rubbed over the chicken.

There are good thai seasoning, jamaican seasoning etc.... that can be rubbed on too.

Jamaican jerk seasoning is lovely - if you can stand the heat....... PHEW!

in the cavity you can place quartered onions and half a lemon.

baste the chicken with the juices from any combination you use to moisten the chicken & add flavour.

Marinate with olive oil,lemon juice,garlic,thyme,and lots of black pepper.
For a low fat alternative (never quite understood why anybody adds butter or oil to meat as it's fatty enough) place an onion or half an apple in cavity (this makes sure the breast stays moist) and sprinkle with dried tarragon.
In the case of a marinade, the olive oil helps bind all the ingrediants together.
put it in a roasting bag with a little water olive and garlic, chicken stock cube and roast suckulent yummy and god im hungry now
Smear with mustard and honey - cover with foil until the last 20 minutes or so to stop the honey burning.

or
finely chop rosemary and garlic mixed with a bit of oil - rub all over and roast

or
Chuck over a jar of Kung Po Sauce - surprisingly nice !

All the above need basting during the cooking
I like to put bacon rashers over the chicken, season then cover with foil. It gives it a nice flavour.
Slit the skin on the breast and squeeze lemon
juice in and then put the rest of the lemon in the
cavity ...cover with foil and cook....enjoy .

I mix softened butter with chopped lemon thyme from the garden then force it under the skin on the breasts. It melts and keeps the chicken incredibly moist and lemony.

I also rub the skin with olive oil and sprinkle dried thyme over it....delish !!!!

Put a hand full of un peeled garlic cloves inside and sprinkle a chicken oxo cube over skin, cook as normal. The garlic when squeezed out is nice and sweet and the oxo cube helps to crispen the skin.
