Use lard to fry in. Fat should be near smoking hot. Break egg into glass (smell for freshness) then pour into frying pan. With spatula flick fat over egg till clear is white - done!

use butter ....do not let the butter get to hot and frazzle the edges , spoon the butter over the egg ....do not turn the egg in the pan.

I use butter for omelettes but not to fry an egg.

Heat up some sunflower oil until you can see it rippling then gently break the egg into it. Leave it for about a minute until all the white is nearly solid then use a tablespoon to baste the yoke until it goes slightly white on top.

oil or dry fry if you have a great pan but you need to be sure it won't burn

the real secret is to make sure the egg is up to room temperature first, then four minutes less 5 seconds.
