Butterfly cakes

I want to make some butterfly cakes but my buns keep sinking in the middle, can anyone tell me what I'm doing wrong or provide me with a fool proof recipe.

Not so much of a recipe pussyfoot, more of a cheat's way. I buy a packet of 12 plain buns from ASDA (49p) then make my own butter cream amd then make them into fairy cakes. I can be really lazy sometimes!
How do you make the buttercream?
Maybe I can surprise the missus.

Ingredients
140g/5oz butter, softened
280g/10oz icing sugar
1-2 tbsp milk
a few drops food colouring



Method
1. Beat the butter in a large bowl until soft. Add half the icing sugar and beat until smooth.
2. Then add the remaining icing sugar with one tablespoon of the milk.
3. Beat until creamy then add the food colouring and mix well.
4. Add extra icing sugar to thicken or a little extra milk to make more runny if necessary.

When your cake is baked, turn off oven & move cake to bottom shelf for 10mins to firm & dry.
stop opening the oven door to see if they are ready
Oh and if you want to be really fancy, sift some icing sugar over the finished buns.
