Can you get hold of Nigella Lawson's book called "Nigella Bites?"  She has an authentic Jewish recipe called 'Chicken Soup and Kneidlach'.

I would willingly write it out only it's a bit long.

I've just found this one as well, but Nigella's is much simpler.

My mother served this every week. Take 1 chicken carcass and put in large pan.  Add grated carrot and grated onion, salt an ground black pepper.  Bring to the boil andsimmer for 1 hour.  Add chopped fresh parsley and vermicelli and simmer for 5 more minutes.  Take of the heat.  When cool take all the meat off the carcass and add to the soup.  Discard the carcass.  Allow the soup to go cold and take the fat off the top.  Voila, Jewish chicken soup and still a favourite in my home.
Just make sure you cut the skin off.
