I HAVE ALWAYS USED FOIL WITH SHINY SIDE OUTSIDE when wrapping food for cooking .only just learned this is not correct.shiny side should be near the food.but did get it right when covering a dish for cooking on.how many more people got this wrong or am i the only silly billy.hubby got it all completely wrong and says he wants a second opinion???

I did not know this either and like you, put the shiny side on the outside!

What is the difference? Do you know?

You have to use the shiny side in so the matt side out can better absorb the heat. Gordon Ramsey doesn't know what he is talking about.

done a bit of research and apparently shiny side out when cooking a cake prevents burning.and shiny side in when cooking meat speeds up cooking!!!!.but i am no DELIA???
I thought the shiny side "reflects" the heat and keeps it in. I might be wrong. :)

i wish i had not read the packet now??happy cooking whatever way do put the foil.in or out.
It does not make any difference. The only reason why one side is shiny and the other side matt is because of the manufacturing process and has no bearing on the cooking results.

I used to be an Area Sales Manager for a company that sold Foil, and I can agree with Tetjam and Anniebird that it makes no difference whatsoever. Its purely the result of the way it's manufactured.
