She who must be obeyed loves sherry trifle.
Odd really cos she wouldn't drink a glass of sherry to save her life.
However I digress ( Only occasionally and with other consenting adults).

My problem, with trifle, is that when I add the jelly to the pre-soaked sponge bits and the fruit, it all mixes up together instead of staying in nice neat layers.

What am I doing wrong ?

She who must be obeyed... (love that :o) )
I love them, too, but don't drink sherry!

How do you pour your jelly?
Try very slowly over a spoon turned upside down.
(did that sentence make sense?)

If I just pour the jelly over the sponge, the same thing happens to me.

O.K. pour the jelly slowly over the back of a spoon.

I'll give it a try

Thanks a lot Bohne if it works I'll get SHMBO to post you a slice !

Are you really called bean ?
Question Author
That should of course be SWMBO. Whoops !
Hi Dewi you do not need jelly for a trifle mix sherry with the fruit juice drained from the tinned fruit cocktail a layer of sponge cakes spread with jam some of the fruit then soak the sponge with juice then spoon on some custard repeat then top with custard when cold top with dream topping and enjoy
What you are doing wrong is using jelly! 'Proper' trifle doesn't have jelly - just add the custard after the fruit/sponge/sherry layer, and then add cream to the top!
I make mine like billearly but I've always used blancmange not custard and, intsead of trifle sponges I use a jam swiss roll.
Hiya Dewi
I make mine using jelly too - may not be the correct way but if that's what you like...
This is what I do... Put the sponge fingers in the bottom of the dish and pour over a good amount of sherry, on top of this put some fruit i.e. strawberries, raspberries or fruits of the forest, make the jelly in advance and let it semi set, pour this over the sponge and fruit then layer custard and cream - mmm mm..... I've never had any complaints.
You could try to pour on half the jelly over the sponge fingers and put it in the fridge to set then if it does mix up you have the other half to pour on once it is set.
