Because it has cream cheese in it!!
Usually, the layer between the base, and the topping uses mascapone or a similar cream cheese.
I use a mixture of Philadelphia and Mascarpone when I make cheesecake.

I have heard of another cheesecake which has coconut strips and icing on some puff pastry and doesn't contain any cheese in it whatsoever!

its because its made out of cheese, just like rice crispies are made out of rice!
I always mix a good few squirts of honey in with the mascapone too before putting it on the base
Its CHEESE and CAKE!!!!
