How long is it safe to keep goose and duck fat in the fridge, rendered after roasting? It's v. good for cooking with and seems to smell OK for weeks, but you never know . . .

I agree it's absolutely excellent for cooking with, and makes the most delicious roast potatoes. I usually keep mine covered for up to about 10 days. It does smell all right as you say, but fat cooked in meat juices shouldn't really be used much after this.
