Why, when I make a nice thick gravy does it become thin next time I heat it up?

It reduces itself as it it stored. Try adding a tad more cornflour, and keep some fat from the roasting pan. The next time you use it, cook over a very low heat and gradually whisk in some more conrflour and seasoning to taste. Hope this helps.
