Olain scones
8oz SR flour
1TSP baking powder
pinch salt
1and a half ounces butter cubed
half an ounce caster sugar
quarter a pint milk

Sift the flour ,baking powder into a bowl add the salt .Rub in the butter ,stir in the sugar and mix with enough of the milk to make a fairly soft dough.
Knead the dough onto a floured surface until smooth.
Roll it out and cut out rounds with a floured cutter.
Place on a greased baking sheet.Brush the tops with mik (just the tops) not the sides and bake at 220C for about 15 minutes until risen.Leave to cool ..eat with plenty of butter jam and whipped cream.
Lemon and Sultanana scones
Same as above but stir in 2ounces of sultanas and grated zest of a lemon.
Cheese scones ..same again but stir in two ounces of strong cheddar ..grated.
Forgot to say ..omit the sugar for the cheeses scones !
Cheese and sugar ..not a good combination !!
