What do I do with vast quantites of lemon balm

I have so much lemon balm growing in my allotment and really need to cut it back radically but can't bear to waste it all. Any idea what to do with it? I think i only ever use a sprig or so at in time in my pimms and lemonade and i would be surely very ill if i drank that amount!!

http://www.astray.com/recipes/?search=lemon+ba lm has a few plus try it with a steamed white fish like sole or plaice - make a cream or simply as herb dressing.

Also try a simple syrup - couple lbs of squashy ripe strawberries crushed and strained to get the juice. Make up the same weight of sugar and make a syrup (boil the liquor til just thickens) into which you can add some lemon balm, mint, thyme, lavender, lemon thyme - really any seasonal fresh herb with some tang to it. Strain and bottle - use like a cordial, as dessert dressing, etc.
I'm sure I read that it helps calm nerves if made into a tissane. You could possibly dry it and use as herbal tea. Although I would check herb books or search engine before doing so. Would hate to think i've suggested you drink something toxic :)
Hi R&R - lemon balm tea is available at health food shops as a caffeine free, 'restorative' drink, so guzzle all you want.
