Anyone have any easy salad ideas that don't include lettuce?

I have tried lots of different types of lettuce I just don't like the feel or thought of eating leaves, and possibly caterpillars.

Yes! I do loads of salads without lettuce!

My favourites are avocado, tomato and mozzarella salad (lay alternate slices on a plate then sprinkle with black pepper and fresh basil and drizzle over oil and vinegar if required); or

Cucumber and tomato salad (as above but without basil) as a fresh tasting side salad; or

Mixed salad of sliced beef tomatoes (or whole baby plum tomatoes), sliced cucumber, coarse grated carrot, small celery sticks, red onion rings. I usually throw it all in a salad bowl and add warmed fried scallops and chestnut mushrooms topped with my speciality homemade dressing. Mmmm....

1700 options here http://www.astray.com/recipes/?search=vegetable+salad - omit the leaves for any variation you fancy. A salad is what you make it - it does'nt have to have lettuce in the dish.

Coucous makes a nice base or bulgar wheat, or rice, with various savoury veg mixed through. Try artichokes, olive and peppers: beetroot and orange; red cabbage, carrott and peppers: celery, peas, cheese and onion - the list is huge so try combining your fave veg and keep it simple with a fresh dressing.

A greek salad?
Finely chopped baby cabbage, onion, pepper. Mix in with some finely diced feta cheese, a few olives, cherry tomatoes and a crushed clove of garlic. Then mix in either a good dollop of green pesto or a drizzle of olive oil, whatever your fancy.

I suppose if you wanted to, you could serve it with falafel.
Sorry natalie it is Friday night and I'm giving you the prize for the daftest question of the week.

Caterpillars are a reasonable source of protein but so are the worms etc that are found in tomatoes and beans etc.

Have a nice weekend.
And now I am sober I think I should give myself the prize for the daftest answer on Friday night.
Err, don`t you WASH the leaves first???
