I tried to make paninis with out too much success. First the bread was hard to find, eventually found some panini bread in Sainsburys, which I then tried to grill / cook in toasted sandwich machine. I tried to make a tuna salad panini.


I learnt a few lessons which was (a) don't put lettuce in as it looks horrible when it has been done cooked and (b) you need cheese to bind it all together and (c) the panini bread is very dough and doesn't compact like shops brought ones.


It didn't taste anything like ones I had previously brought from the shops!!

If you can't get pannini rolls then I've found the best alternative is ciabbata rolls. i think Asda and Tescos do these flat grilled pannini roll packs but I reckon ciabatta is as good if not better. Our current favourite filling is smoked ham with cheese using maasdam, gruyere or leedamer type cheese, a little tom puree on the base and a sprinkling of mixed herbs. put in your pannini press for about 3-4 mins.

in italy they use ciabatta for their panninis

If you don't have a press or a George Foreman - you can wrap a brick in foil or use a cast iron pan and place it on top of the pannini while it is cooking.
