1.I used to buy a really nice nougat but cannot remember the name of it. I can't find it anywhere in Melourne . I do know it came in a blue and white box. Does anybody know where in Australia I can buy or if there is a web site that i could order it off? 2. Does anybody have a good recipe for nougat?

Recipe for simple French Nougat: Rice Paper, 1lb granulated sugar, 8ox powdered glucose, 1/4 pint water, 2 egg whites, 4oz blanched almonds (toasted and chopped), 2oz angelica (chopped)

Dampen the inside of an 8x6 inch tin and line with rice paper. In a heavy based saucepn, dissolve the sugar and glucose in the water over a gentle heat and boil to 132 degrees C.

Beat the egg whites until stiff then gradually beat into the syrup. As soon as the mixture begins to thicken add the nuts and angelica. Cover with rice paper and press down with a heavy weight. Leave for at least 12 hours before cutting.
