The co op very kindly send me recipes from time to time and they sent me this one last week.  Making it tonight, hope it turns out as tasty and interesting as it sounds๐Ÿ˜‹

Thats got to be one of the nicest one pan things we've ever had, and as I made the full recipe for four, there's enough for tomorrow too ๐Ÿ‘๐Ÿ˜‹

So it is a main dish, rather than a side dish ?

It's a main dish OG, the recipe says serve by itself or with rice or popadoms.

We had it by itself on the first night, it's very filling, but then last night had the leftovers with some peshwari naan.

Just goes to show fresh, home made vegan food can be unhealthy but delicious, too

It really does sound lovely - I know himself won't eat it but I may try and quarter the quantity and make it myself.

  Do you think it will freeze?

Im not sure Helen, that's why we finished it off last night, I didn't want to freeze the leftovers as I normally would, then find out it was inedible when defrosted.

Cheers. As I am minimising carbs these days, rather than bread or rice I may consider it with cauliflower "rice" instead. I must go save the recipe.

hmmm I will experiment and get back to you - but it will be interesting to see if it freezes well

High in salt (36% or RDA) and saturates (30% of rda), Vagus.  

Helen, it would freeze very well but I would portion it up before adding the spinach and mango and add those fresh a couple of minutes before end of reheating.

Oh yes OG, cauliflower rice is a good idea ๐Ÿ‘although to be honest we didn't need anything else the first time, as I say it's very filling.

Thatd be great Helen, I'm sure I'll make it again and it would be interesting to know it does freeze well ๐Ÿ˜‹

Barry, I feel it's only unhealthy depending on what your diet is and what you eat the rest of the day ๐Ÿคท‍โ™€๏ธ

Barry I would not bother with that and would freeze it all in one as the amounts I make it would be pointless and would mean having to use the mango up other ways - chuck it all in is the best for me

Helen, I bought ready prepared mango, and also a bag of frozen mango, just in case either were unavailable in our click and collect. Next time I'll use the frozen stuff.

I agree, Helen, that's what I'd do too.

Try it, Helen, but I would definitely add the spinach fresh.

Bit of a non-starter for me as a main dish then. That's over 3 times my self imposed meal limit. Talk about special occasions only ๐Ÿ˜ฌ

Lol...that's the same reason I don't eat much in the way of legumes anymore either.

Though I do miss some. I used to love flageolet beans...but they've disappeared from supermarket shelves. Only found on Waitrose now. 

I'm beginning to think it's the mango causing the issue.

Oh, lentils are just as bad. Didn't realise. At this rate I need to ignore too many things. Well an Indian meal is just going to have fit in to my life evety now & again, regardless. It'll have to not count if I've not looked it up.
