What type of marinade is used for smoked turkey or pastrami?

For pastrami - My source says rub a joint of sirloin (boneless) with dark brown sugar and leave for 12 hours. Then mix together an ounce of allspice and 3oz salt and 2-3 chopped bayleaves. You rub a little of the salt mix into the joint every day for 7 days, turning the meat every day as well. You then make a flour and water paste (about 1lb plain flour) and enclose the beeef completely in it. Cook in an oven set to Gas 5 (190C/375F) for about an hour and a half. Let the whole lot cool, then remove the crust before eating. Hope that's helpful Can't say for turkey, tho!
