Left over Jersey spuds chopped up with left over chilli, put in a frying pan (no fat) heated through then make a couple of wells for eggs and heat until cooked but still runny. Better that throwing anything away and sounds good to me.

Expensive but worth it for the short time they are in season Bobbi. They are nothing like they were when I was a kid though, covered in dirt and skin that would just run off

I usually have Tesco spuds... no idea it's what you do with them that counts... Being honest if I were cooking (Yes it has being known) I would make the extra effort.
