Cauliflower

I have had delivered a rather large cauliflower and although it's ok it's not at peak freshness.
I can only cope with a small amount of cauliflower at a time.
I wondered - should I blanch it or roast it and freeze it ?
I can make soup with some of it for now. Any suggestions please ?

Cauliflower and Stilton soup is lovely or you could make cauliflower cheese and freeze it, it should be cooked from frozen
make a batch of soup and freeze the soup you don't immediately need for later consumption or put some of it in a stir fry with other veg or roast it and use it to dip into sauces or share it with a neighbour ... but freeze it for future use in any way you want to!

Yes Tony V - good thinking .
We can never eat a whole one. I blanch it and then put it on a tray and open freeze it. Once it is hard I stick it in a bag. At least if you open freeze it you can take out as much as you need and it's not one big clump!
Rosie my personal favourite would be cauliflower cheese and garlic bread.

We’ve had two cannon ball size cauliflowers delivered recently.
First one, I used the whole of it to make cauliflower cheese. It did us for two days and was delicious.
The second one, I added half of it to a roasted root veg curry towards the end of cooking, as per the recipe, it also was delicious.
I have the other half in a plastic bag in the fridge, it will be chopped up and added to a chicken korma tomorrow night...I always add cauliflower to curry.

Whatever you do with it Rosie, I hope you enjoy it. In these trying times we’re making every effort not to waste anything, especially fresh veg and fruit...or gigantic cauliflowers!
Roasted cauliflower soup is delicious especially if you sprinkle fried lardons on when serving
Personally, I'd him it. I loathe cauliflower.

Don't think I've tried roast cauli. I'll have to give it a whirl.
Get some curry powder, mix a tspoon of it into a good dollop of decent mayo, dip the cauli florets into it raw and eat them as a snack.
I had a huge cauli last week, so I split it up and put most of it in plastic bags in the freezer. I had some for lunch last Sunday and it was revolting, so many thanks for the ideas on how to use the rest. Thanks
Yesterday I put some florets of caulie in a bowl. Put two rectangles of Boursin cheese with garlic and herbs on top. Put in the microwave for about 3 minutes.
It was great, a quick variation on cauliflower cheese.
