I quite often cook Sunday Dinner for the in-laws and I like to vary the vegetables.

I will often do things like peas and pancetta, creamed spinach, cauliflower purée ... etc. I've managed to convert MIL with sprouts and chestnuts!

I would like some new and interesting ways to prep veg and would be grateful for any suggestions. TIA.

Red peppers...I like the long pointed Ramiro...stuffed with whole cherry tomatoes, basil, olive oil and garlic.
That sounds nice Pasta but I wouldn't serve it with a Sunday dinner.

I love pureed swede with lots of black pepper and butter. I just wish it was easier to chop.

Califlower and broccoli cheese always goes down well here.
We like parsnips and carrots mashed together with a bit of butter and black pepper

Swede is one vegetable I cannot stand. I will do celeriac mash however.

I'm also thinking balsamic roasted carrot batons...
Honey roasted carrots. I remember the fad a few years ago for covering everything in semolina which was weird. Sophie Grigson has soom good ideas with veg.
I've had it with Middle Eastern spiced roast lamb...it went beautifully.
Does sound nice but I was assuming NoM meant a traditional Sunday roast with gravy and stuff.
Slice brinjals (egg plant) oil spray, salt & grill till soft. Slice zuccini lengthways & grill as above
Whole fried ladies fingers (okra) gives nut crunch & color.

Ummmm, have you tried roasting the swede before chopping? That's what I do before adding squash or sweet potato to soups.

It would work with the lamb you describe, pasta, but this is a traditional British roast I'm planning. FIL doesn't like "all that foreign muck."
We love swede, we put the whole thing in he microwave then just scoop out the flesh, job done and no chopping. I often do shredded cabbage with onion and apple ,lovely especially with pork
That sounds nice, Ama, I had a pork chop with caramelised apples yesterday.
It's really nice Ummmm, just livens up the boring old cabbage.
Cook carrots in Orange juice and serve smothered in butter and a little sugar.
Shredded Savoy cabbage with fried onion, garlic, and bacon sweated down with a splash of sherry.

Roasted shallots and sprouts with thyme and garlic finished with a squeeze of lemon.

Red cabbage with onion, apple, cider vinegar and garlic seasoned with nutmeg, cinnamon. Freezes brilliantly.

Roasted shallots.

Braised leeks, wine, stock a little thyme and butter.

I could go on but need to get spare room sorted for visitors this weekend.

I like the idea of roasted shallots and had actually thought the same thing t'other day.

The others don't like red cabbage and I don't like leeks.

How can I jazz up new potatoes?
New potatoes - wrap up in foil with loads of fresh chopped herbs and knobs of butter - be generous! Bung in oven for 45-60 min depending on size of spuds and behaviour of oven.
I sometimes make a dressing like tartare sauce for new pots. Chopped capers, fresh herbs (parsley, chervil chives are good), a tad of garlic, lemon juice and olive oil or butter according to preference.

They go well with chicken, lamb and pork

Funnily enough I did the same thing last week when I had salmon and veg. I prefer homemade tartare sauce.
I remember having some deep fried cauliflower in a restaurant some time ago, was very nice.
