Delia Smith how to cook books are very simple to follow and pretty comprehensive
seconded. Fail safe recipes and she even specifies pan sizes.

has he just started cooking?  I still rely on my "how to boil an egg" book my parents gave me when i moved out  cant remember the authour.  It really does tell you how to boil an egg and much much more, including a roast dinner and it even tells you how to cook when you dont have stuff such as scales and tins.  Its great for people going away to uni too

just gone to the kitchen to look - its Jan Arkless

Reader's Digest did an excellent 'Quick and Easy Cooking' cookbook, but it is out of print.  My mum had a copy and I wanted one, searched for ages.  I finally found a copy on ABE books - website with links to a lot of booksellers.  And it was very reasonably priced and near perfect.
