Canning Jars

just seen a recipe with canning jars,never heard of them,are they the same as jam jars etc.

Kilner jars, kate, in my book. A mate of mine makes them as one of the UK's biggest bottlers....he swears go for the glass on glass ones as there's a cancer risk with rubber seals but then how often does your fruit come into contact with that orange-ish seal......

The American equivalent is Mason jars and they're a slightly different shape - just in case you ever get an American recipe.

DTC, how do the glass on glass versions work without rubber seals?

That's strange… here in the U.S., the rubber sealed "canning jars" are and have been for a long time, a thing of the past. I'm not sure one could even buy the rubber seals. In fact, I buy a sell things from farm and ranch auctions to re-sell on eBay and I find that vintage canning jars with the "flip-over" bails to hold the glass lids snugly on rubber seals are a great item to resell due to their "antiqueness".

We can a lot of things… vegetables, meat and, of course jellies, preserves and jams and the typical "canning" jar comes with a lid that has a 'pimple' in the middle that sinks with a noticeable "ping" when the contents cool and cause a vacuum to form.

The jars (and lids) come in lots of different sizes as well a decorative ones and more work-a-day ones...

jomifl - they look like a normal kilner but have a frosted glass edge that comes together in creating the seal, the closure mechanism the same....not sure if they are impregnated with something like silicone.....can ask my mate if you wish. Closer to a Mason's jar I guess....
