I make jam without water, but you can't make real jam without sugar, mixtures of fruit and gelatin sound awful to me. The sugar is the preservative, and sugar fructose exists anyway in the fruit to you can't avoid it, and why would you want to?
my friend who use to make marmelade used pectin from a health shop ..
