Chinese rice with mushrooms

I am making a Chinese meal tonight and would like to do a side dish of rice with mushrooms. Has anyone got a fairly quick recipe. Thanks very much.

If you want to be very quick, run to the supermarket and get a pack of Uncle Ben's risotto rice with mushrooms. 2 minutes in the microwave.
Cook and quickly cool some long grain rice, cooked cold rice is best for stir frying.

Fry off sliced mushrooms, grated fresh ginger and some sliced spring onions.

Add cooked rice, keep everything moving add a good glug of soy sauce and a splash of sesame oil. Serve.

Thanks eccles,that seems ideal. I'm trying twice cooked pork which I have'nt done before. Hope it tastes as good as it sounds.

It's so easy to achieve good food on paper, good food on a plate takes a tad more effort!
That is a dish that I have very fond memories of. My house mate bought a wok from Boots and that was one of the recipes that came with the wok.

I haven't had it in ages, I hope you enjoy yours.
