I sliced and froze courgettes in the summer time when I had a glut. I bagged them in portions but did not blanch.

Not having tried them before I'm unsure how to use them now. Should I defrost and steam or throw straight in like frozen peas? Or are they likely to be mushy and only good for soups and stews?

Just use them in soups, stews, spag bol, shepherds pie etc.
I did exactly the same Maidup...got loads in the freezer from last year. Be interested to see if there's any other suggestions., xx
Hello, they are very good added to onions, garlic, tomatoes , a little rosemary, salt and pepper to taste , to make a ratatouille. They are best taken from the freezer immediately prior to use to avoid a soggy mess. As a previus answer has said they can be used as a component in many dishes but they are not very successful used as a vegetatble on their own.

Thanks everyone for your thoughts so far - its ratatouille this evening then over a jacket spud.

I bought seeds for this year's plantings and feel the need to eat last year's before i sew them! I love them fresh but not so sure about frozen.
