coconut milk ? - it must be a Thai curry?
I grind my own garam massala add chillies - instead of coconut milk use
Natural Greek Yogurt
a small bunch of chopped coriander right at the last minute
Question Author
does the greek yoghurt not curdle when heated?
(Not paticularly thai, just sweetened with the yummy stuff)
Assuming you are cutting out the coconut milk because of calories did you know you can buy a reduced fat coconut milk?, I use it in my WW curry recipes, whatever is left over I freeze into ice cube bags and just use a few cubes from frozen the next time I need it.
Greek Yogurt is fine to cook with

Stir it in at the last minute
plus 1/2 cup of tomato puree
I love a red thai curry and it's one of the few things I won't consider using reduced fat for, (the reduced fat one is a bit watery)... I just eat it on weigh in day so I've got a week to repair the damage! :c)
I'd use coconut milk...and coconut oil. Both are excellent for your health, and the oil is said to boost metabolism. It is made of short chain fatty acids that are used by the body very quickly.
and sprinkle julienne strips of ginger on top - if you are flush, dissolve
strands of saffron in hot water, then add to curry .x

The raw ginger is very benificial to all sorts of things.
tomato-ey based ones are nice.

you could add a few drops of coconut essence if you just like the flavour...
Try this....

Cumin Chicken

2tbs Vegetable oil/Ghee
2 Onions, chopped
1tbs Cumin Seeds
3-4 Cloves Garlic, crushed
2 Green Chillis, chopped (or more if you like it hot!)
1tsp Salt
2 ½ tsp Garam Masala
2tsp Turmeric
2-3tsp Tomato Puree
½ Tin chopped toms
1” Grated Root Ginger
Fresh Coriander
2-3 Chicken breasts or vegetables of your choice.

Heat oil in a frying pan, add onion and cook until lightly browned add garlic and chilli followed by all of dry ingredients one by one, stirring a few times between each addition.
Add 2-3 chicken breasts (or 250g mushrooms and handful of spinach)
Stir around and add puree, tomatoes and root ginger.
Stir around for a minute or two, until all sealed.
Add boiling water to not quite cover ingredients & simmer until meat/veg cooked (about 15-20 mins).
When ready to serve add a handful of chopped fresh coriander.
you can use tinned tomatoes and curry powder to make a tikka? that's pretty healthy

Same....I only use it for Thai curry's.
Coconut milk is popular in Goan cooking as well as Malay curries. Thai cooking is what most people associate coconut milk with though.
Use good quality spices and yogurt for that creamy flavour. Add fresh lime juice and plenty of freshly chopped commander towards the end of cooking time. I also add a good load of shredded spinach but I appreciate that's not everyone's' cup of tea.
Coriander not commander. Lol
