The substance that gives hair its color is melanin and is produced within the follicle or root, if you will, of the hair. As one ages, the melanin is reduced in production and the hair is then grey, or white...

another way of looking at it is that hair is always white. When we sare young it has added melanin and as we age melanin production slows and ceases allowing the trus colour of the hair to be seen
