Without a doubt, Great Expectations. It's a mystery, a thriller, a romance, an adventure and a social comment all in one, and it changed my life.
War & Peace. Wonderful, beautiful, romantic epic. When I finally read it I kicked myself for not having read it sooner.
A Suitable Boy by Vikram Seth. It's not just a love story but a social comment on India/Pakistan in the 1940's. Beautifully written, poetic.
Magician by Raymond E Feist.

Amazingly well written and absolutely thrilling.
Pride and Prejudice
catch 22, Funny and though provoking, incredibly intelligently written so much so that you really have to think about what is being said to understand it.
The Worm Forgives the Plough by John Stewart Collis.
He was a poet among ecologists. Here he describes his life and work in the countryside during WW2, and studies farm life and nature in minute detail in an illuminating and fascinating way.

Tough question - A Streetcar Named Desire. Incredibly intense, fervid, believable madness and much more. Stunningly simply written
I Claudius by Robert Graves as I have read and re-read it so many times since I was 11, having immediately bought it when the BBC showed the first episode and I was completely hooked. :D
