how do i make a good peppercorn sauce for steak chicken etc. or where can i buy one?

Hi they do one in Asda on the fresh meat department its the best I have used. Dont buy the packet one you mix with water it isnt very nice.

Mrks and Spencers do a fresh one i think colemans do one you add water with as well
single cream heated through in pan, half an oxo cube, loads of pepper, lump of butter, splash of brandy if you want. Not very posh but works!

Hi thistle69, here is a peppercorn sauce that we like with steak...


3/4 pt beef stock and add 25 green peppercorns to the liquid and put to the side


1 small bottle of red wine


10/12 black peppercorns crushed by rolling pin


2 tblsp Double cream


2 peices ribeye


coat each side of the steaks with the crushed black peppercorns


Oil a griddle pan and heat until very very hot then seer the steaks and remove to the side while you make the rest of the sauce. keep the steaks warm


Pour the red wine into the griddle and reduce by a third, that will take 2 mins, then add in the stock with the green peppercorns and cook for 5 mins then add in the double cream and stir till heated through. You can thicken this with a little corn flour (2tsp) mixed with a little cold water and pour into sauce if not thick enough.


Serve with veg of your choice...


Marks and Spencer do a fab. pepper sauce in a jar. I always keep a couple in the cupboard! Yummy!
forgot to say add 1 tsp dijon mustard to the sauce as you cook it.

Colemans - mild creamy pepper sauce is good, just add milk and throw in microwave. good with steak or salmon.
Knew there was something missing - I forgot to add the dijon as well!
