Sorry my heading got confused!

I've got nearly all the grid filled in, with some 'clashes'. Odd animals seem to be appearing, but now I'm completely stuck!
What I need is the quotation, but I've no idea where to look for it! I sort of assumed that the title was an anagram (struggle)
Please could some kind person give me a shove in the right direction?

All the words you substitute for dog, cat, raven etc. are alternative names of pigs. Some are uncommon so you'll need to consult the web for a couple of them. There was a puzzle- last year ? - with some of the names.
Quite enjoyed this but I always think that nonsense words in the finished grid are slightly disappointing. BTW, could someone kindly give me a hint as to how the clue for 7 down works?

No worries. I agree fully with what you say about nonsense words. I think we get so used to clever grids with changes and deletions that still leave real words that it makes you unsure of your answers when the words aren't real. That apart, I thought this was the best puzzle this year so far.
If I'm thinking of the right quotation I'm not really convinced that it justifies the replacements.

It's nice to see changes resulting in real words, but I don't think it's a weakness when they don't. Real words make it easier for the solver to complete the grid, and in some circumstances that might be achieved without fully understanding what's going on, so I can see why a setter might not want to end up with a final grid consisting of all real words.
