Well, for business purposes I keep records going back seven years. Otherwise I'd be swamped. Why not take a snapshot of them and chuck the excess paperwork?
Personal tax reasons - 5 years, but I keep 10. Business 7 years.
Apart from the PAYE tax point raised above, they form your primary record of what NI you and your employer paid in each year. Hence they are far more important than either of the above two answers suggest, because The Pensions Service, who track this stuff, are prone to having incomplete records and this may impact your Basic State Pension and/or Earnings-related Pension entitlement. Once you have established (via a pension forecast) from these chaps that their record aligns to yours, they are perhaps less important.

Mine only go back to about 1980. I scan all mine. I've also kept every bank statement I have ever had. (1968).

having been a victim of fraudulent cloning, it is easier for me to keep everything, to honest....you know it is jjust how modern life is....
I keep P60,s for about 5 years. I shred every bank Statement once i've read and checked it along with nearly all other correspondence. I try to keep just the latest utility bill and one piece of documentation for each insurance policy.
