In what way 'what sort', it's the same rules for frying pans as saucepans,I've used cast iron skillets, aluminium non-stick with a ferrous base and a stainless steel saute pan,
I've just bought the daughter a stainless steel sauté pan.....any good?

I've been using Judge non-stick, but the non-stick seems to be bubbling, so I wondered if anyone could recommend something better.
Problem with non-stick is that very high temperatures cause the non-stick to 'unstick', if you're looking for a pan to sear meat etc. then cast iron is the way to go.
I use Stellar and a Tefal one which is particularly good. Both are non-stick
Have a look at Vogue in the Nisbetts website.

I mostly only use it for frying eggs.
