How do I de-bone (butterfly) a frozen (half) leg of lamb, once I have defrosted it?

Ask your butcher to do it, pitstopbunny. I tried to do it once complete with 'simple instructions'..... it ended up looking like a very crumpled and very bedraggled chrysalis rather than an exotic butterfly!

Best way?..........use a knife thats nice and sharp. Just for safety, always have your knives as sharp as possible, or you risk a slip and de-fingering etc.
