What's the name of the shredded prawn cracker type stuff that gets served with Yuk Sung in lettuce leaves in chinese takeaways/restaurants please?

you sure it's a cracker as the crunch is often water chestnuts diced up....
though you could use a fine Chinese rice noodle like mai fun.

Thanks DT ..... on the link attached (hopefully!!) it's shown on the second image down. Can it be purchased somewhere MccFluff? Have been making my own yuk sung and loving it - but something is missing!!
same stuff as mai fun - any Chinese store....
Waitrose does rice vermicelli (mai fun) too....

Can't find it in Waitrose sadly x
try online stores, wing yip will prob do it
Not questioning you Echo but my local Waitrose is one of the smaller branches and they stock the Mama brand of Vermicelli noodles. They are in amongst the World Foods aisle but not with the rest of the noodles. The are in a semi translucent packaging and sort of cube like in shape.

You'll find them easily in any Chinese/Thai/Japanese grocer too.
